Place the fresh mint leaves, sugar and grated lemon zest in the Thermomix bowl and grind on speed 10 for 5 seconds. Use a spatula to scrape the sides and grind again on speed 10 for 5 seconds. Repeat process again. Then add the cream and yoghurt and cook for 2 minutes at 50 degrees on speed 3. Place the mixture in a shallow stainless steel dish, allow to cool and freeze for at least 10 hours or overnight.

Remove the ice cream from the freezer and place in the fridge for about 5 to 10 minutes or until ready to cut into squares. Place the squares in the TM bowl, add 15ml milk and blend on speed 6 for 10 seconds. Place the mint ice cream in a container with an airtight lid and place in the freezer for at least 4 hours.

Mint ice cream with chocolate chips

Mint fans will fall in love with this classic combination of chocolate and mint! The ice cream is prepared super quickly in the Thermomix and is ideal for warm summer evenings. Just spoon and enjoy!

For the chocolate chips: If using whole chocolate, you can either roughly chop it on a cutting board or dice it and grind in the TM bowl on speed 7 for 10 seconds. Set the chopped chocolate aside and rinse the bowl.

Then add heavy cream, peppermint essence and food coloring to the TM bowl and mix on speed 2 for 30 seconds while pouring the condensed milk through the hole in the lid. Then blend on speed 3.5 for 1 minute. Add the chocolate chips and mix on speed 3.5 for 45 seconds or until mixture looks thick and smooth. Place the mint ice cream in an airtight container and place in the freezer overnight.

Vegan chocolate mint ice cream

The aroma and taste of mint harmonize wonderfully with both fruit and chocolate. The following is a recipe for chocolate mint ice cream without milk and cream that all chocolate lovers (and vegans) will surely like.

First, soak the dates in hot water for 15 minutes until soft. Then drain (discard the hot water), place in the bowl of the Thermomix and chop for 10 seconds on speed 6. Scrape the sides of the bowl and chop again on speed 6 for 10 seconds.

Add all other ingredients and mix on speed 9 for 1 minute. Scrape the bowl and blend again on speed 9 for 1 minute until the mixture is nice and creamy and free of lumps. (Be careful when removing the lid as the mixture tends to drip everywhere). Transfer to a suitable freezing container and freeze the chocolate mint ice cream for 6 hours or overnight.

Tip: If you buy dates that have already been stoned, make sure that the stones have been completely removed, as there are often small pieces left.

Fruity strawberry mint ice cream recipe

Place the chopped strawberries, water, cornstarch, and sugar in a small saucepan and cook the mixture over low heat for a few minutes, until the strawberries start to break down. Remove the strawberry sauce from the heat and let it cool to room temperature.

Place the cold mint cream in a large mixing bowl. Use a mixer to whip the cream until it forms a few peaks. Add the condensed milk, vanilla extract, and peppermint extract. Mix until fully incorporated. Then fold in about half of the strawberry sauce.

Pour the ice cream mixture into a suitable container. Pour the remaining strawberry sauce on top and make strudels on the surface. Freeze the ice cream for at least 6 hours or overnight.

Tip: You can also prepare the ice cream mixture for this recipe in the Thermomix. To do this, first whip the cream at speed 3.5 until stiff and set aside. Then beat the condensed milk, vanilla extract and peppermint extract with the mixer attachment for 30 seconds on speed 3.5. Add the mint cream and mix on speed 3 for 5 seconds.
